Description

This Watermelon and Feta Salad is a refreshing and flavorful dish that combines sweet watermelon, salty feta cheese, and tangy dressing. Perfect for a light summer meal or as a side dish for a barbecue.

Ingredients

Scale

Ingredients:

  • 4 cups seedless watermelon (cubed or balled)
  • 1 cup cucumber (sliced into half moons)
  • 3/4 cup feta cheese (crumbled)
  • 1/4 cup red onion (thinly sliced)
  • 2 tablespoons fresh mint (chopped)
  • 2 tablespoons fresh basil (chopped, optional)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice or balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, gently combine the watermelon, cucumber, feta cheese, red onion, mint, and basil if using.
  2. Drizzle with olive oil and lime juice or balsamic glaze. Toss lightly to combine, being careful not to break up the watermelon or feta.

  3. Season with salt and pepper to taste. Chill for 15–20 minutes before serving for best flavor.

Notes

  • Add arugula or baby greens for extra texture.
  • Substitute lime juice with lemon or use balsamic reduction for a sweet contrast.
  • Best enjoyed fresh on the day it’s made.
