Description

These Protein Peanut Butter Cookies are a delicious and healthy twist on classic peanut butter cookies, using powdered peanut butter to reduce fat while keeping great flavor. Perfect for a quick snack or post-workout treat, they are easy to make and provide a good boost of protein with minimal ingredients.

Ingredients

Scale

Dry Ingredients

  • â…” cup powdered peanut butter (PB2 or similar)
  • ½ cup baking sweetener of choice
  • Pinch of salt

Wet Ingredients

  • â…“ cup water
  • 1 egg

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper to prevent sticking and make cleanup easier.
  2. Mix the Peanut Butter: In a mixing bowl, combine the powdered peanut butter with water. Stir until it forms a thick, smooth paste resembling peanut butter in texture.
  3. Add Sweetener & Salt: Add your preferred baking sweetener and a pinch of salt to the peanut butter mixture. Stir well until fully incorporated.
  4. Incorporate the Egg: Crack the egg into the bowl and mix until the dough is smooth and slightly runny. This will help bind the cookies together.
  5. Form the Cookies: Using a spoon, drop spoonfuls of the dough onto the prepared baking tray. Shape them gently into cookie forms; note that the dough won’t spread much during baking.
  6. Bake: Place the tray in the preheated oven and bake the cookies for 10 to 13 minutes. They will be soft when you take them out but will firm up as they cool.
  7. Cool & Set: Allow the cookies to cool on the tray for 5 minutes, then transfer them to the refrigerator for at least 40 minutes. This chilling step helps achieve the best chewy texture.

Notes

  • Use parchment paper to prevent cookies from sticking and ensure easy removal.
  • The dough is slightly runny, so shape cookies carefully to maintain size and thickness.
  • Refrigerating after baking is key for achieving optimal texture.
  • Feel free to experiment with different baking sweeteners like erythritol, stevia blends, or monk fruit.
  • Cookies can be stored in an airtight container in the refrigerator for up to 1 week.
